🍡Spicy Paneer Skewers🍡


Hey dollies.

As I’m enjoying my uni vacation at the moment, I’m almost free all this while & most prolly like

to spend some time in productive cooking. Moreover I have deep tremendous love for cooking, cooking is like romance with myself. It is the next level of meditation.

Anyhow today I’m posting a recipe of paneer& vegetable skewers, I made last night. I hope you like it.

Serve these easy-to-prepare paneer skewers with naan bread, rice and mango chutney for a Indian-inspired dinner.


Cooking time
Preparation: 15 mins
Cooking time: 15 mins

Ingredients ~
-4 courgettes.
-500gm paneer, cut into cubes.
-1 red pepper, yellow pepper and green capsicum, deseeded and chopped into large chunks.
-1 small red onion, chopped into large chunks.
-2 tsp curry powder
-5 tbsp olive oil
-3 tbsp lemon juice
-2 garlic cloves, crushed
-2cm piece ginger, finely grated.

Method ~

1- Thickly slice 2 courgettes. Using a peeler (a swivel peeler works well), thinly slice the remaining 2 lengthways.

2- Thread the thick slices of courgette onto skewers, along with the paneer, red&yellow bell pepper, green capsicum, olives and onion.

3- Mix together the curry powder, half the oil, the lemon juice, garlic and ginger, and spoon over the skewers. Leave to marinate until ready to cook.

4- Heat a large griddle pan, drizzle with olive oil. Put the prepared skewers on the griddle and cook for about 2 mins on each side, or until tender. Serve with rice or naan and mango chutney.
